A dreamy, creamy, caramelly cheesecake topped with whipped cream, perfect for any dessert lover!

Ingredients

  • 1 ½ cups crushed digestive biscuits or graham crackers
  • 5 tablespoons unsalted butter, melted
  • 3 tablespoons light brown sugar
  • 3 (8 oz) packs cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy whipping cream
  • 1 cup soft caramels or caramel sauce
  • 2 tablespoons milk or cream
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • Crumbled biscuits or crushed nuts for garnish

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix crumbs, butter, and sugar. Press into a springform pan.
  3. Bake for 10 minutes. Cool completely.
  4. Beat cream cheese and sugar. Add vanilla.
  5. Whip cream to stiff peaks and fold into cheese mix.
  6. Spread over crust. Chill for 4–6 hours or overnight.
  7. Heat caramel with milk. Stir until smooth.
  8. Cool slightly and pour over cheesecake. Let it drip down the sides.
  9. Whip cream, sugar, and vanilla.
  10. Pipe or dollop on top. Sprinkle with biscuits or nuts.
