Caramel Pecan Icebox Cake is a creamy and crunchy dessert that is perfect for any occasion. It’s a no-bake treat that’s easy to prepare and can be made ahead.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 250g cream cheese, softened
  • 1 tsp vanilla extract
  • 1 cup thick caramel sauce (plus extra for drizzling)
  • 1 cup chopped pecans

Instructions

  1. In a bowl, mix graham cracker crumbs, brown sugar, and melted butter until well combined. Press half of this mixture into the bottom of a 9×9 inch dish to form the crust.
  2. In another bowl, whip the heavy cream with powdered sugar until stiff peaks form. Set aside.
  3. In a separate bowl, beat the cream cheese with vanilla until smooth. Gently fold in the whipped cream mixture to make the filling.
  4. Layer half of the cream filling over the crust, followed by a generous drizzle of caramel and a sprinkle of chopped pecans.
  5. Add another layer of the remaining graham mixture, the rest of the cream filling, and finish with caramel drizzle and pecans on top.
  6. Cover and chill for at least 4–6 hours (or overnight) until set. Slice and serve cold.

Notes

  • Serve cold with a drizzle of warm caramel just before plating.
  • Add a scoop of vanilla ice cream on the side for extra indulgence.
  • Garnish with whole pecans or a dusting of cinnamon.
  • Use full-fat cream cheese for a richer texture.
