200g digestive biscuits, crushed
100g unsalted butter, melted
500ml milk
4 egg yolks
1/3 cup sugar
1/4 cup cornstarch
1 tsp vanilla extract
1/4 cup caramel sauce (for layering)
1/2 cup chopped pecans
Extra caramel sauce for topping
Instructions
Combine crushed biscuits and melted butter. Press into a baking dish and chill for 20 minutes.
Heat milk until steaming. In a bowl, whisk yolks, sugar, and cornstarch. Gradually pour in the hot milk while whisking. Return to saucepan and cook over medium heat until thickened. Stir in vanilla and cool slightly.
Spread half of the custard over the crust. Add a drizzle of caramel sauce, sprinkle pecans, then layer the remaining custard and more caramel.
Refrigerate for at least 3 hours, or until set. Top with more caramel sauce and a generous handful of pecans before serving.
