Caramel Nut Cream Puffs are flaky, creamy, nutty pastries filled with a rich caramel cream, topped with roasted nuts and drizzled with extra caramel sauce.

  • 1/2 cup unsalted butter
  • 1 cup water
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 1/4 cup caramel sauce (plus more for drizzling)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Chopped roasted nuts (almonds, hazelnuts, walnuts)
  • Powdered sugar for dusting
  • Extra caramel sauce for drizzling

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. In a saucepan, heat butter, water, and salt until it comes to a boil. Remove from heat, stir in flour quickly until it forms a ball. Return to heat for 1–2 minutes while stirring.
  3. Let cool for 5 minutes. Beat in eggs one at a time until smooth and glossy.
  4. Pipe into rings or rounds on the tray. Bake for 20–25 minutes until golden and puffed. Let cool completely.
  5. Whip cream with powdered sugar and vanilla until soft peaks. Fold in mascarpone and caramel sauce until creamy and thick.
  6. Slice puffs in half. Pipe or spoon caramel cream inside. Top with chopped nuts, drizzle with caramel, and dust with powdered sugar.

  • Best served chilled with coffee or tea.
  • Perfect for parties or elegant dessert platters.
  • Add a sprinkle of sea salt on top for contrast.
  • Make choux in advance and freeze unfilled.
  • Don’t open the oven early or puffs may collapse.
