- Crust:
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- Cheesecake filling:
- 680 g (24 oz) cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Caramel layer:
- 3/4 cup thick caramel sauce (store-bought or homemade)
- Topping:
- 1 cup mixed nuts (peanuts, cashews, pecans), chopped
- 150 g dark chocolate, chopped into chunks
- Extra caramel sauce for drizzle
- Preheat oven to 165°C / 325°F. Line a 23 cm (9-inch) springform pan.
- Mix cookie crumbs with melted butter. Press firmly into the base. Chill 10 minutes.
- Beat cream cheese and sugar until smooth. Add eggs one at a time.
- Mix in cream and vanilla until silky.
- Pour filling over crust and bake 50–55 minutes until center is just set. Cool completely.
- Spread caramel over cheesecake, letting it drip down the sides.
- Sprinkle with nuts and chocolate chunks. Drizzle more caramel.
- Chill at least 4 hours (overnight is best).

- Use room-temperature cream cheese for a smooth batter.
- Toast nuts lightly for deeper flavor.
- Swap caramel for dulce de leche for extra richness.
