  • 1½ tsp baking powder
  • ½ tsp baking soda

  • 1 tsp cinnamon (optional)
  • ¾ cup neutral oil
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1½ cups cold heavy cream
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup granulated sugar
  • 2 tbsp water
  • ¼ cup coconut cream
  • Pinch of salt
  • Fresh whole cherries
  • Crushed nuts or biscuit crumbs

Instructions

  1. Mix flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  2. In another bowl, whisk together oil, granulated sugar, brown sugar, eggs, vanilla, and buttermilk until smooth.
  3. Add dry ingredients to wet mixture and mix gently.
  4. Divide the batter into two 9-inch pans and bake at 175°C for 20–25 minutes.
  5. Cool the cakes completely, then slice each into 4 thin layers.
  6. Beat cream cheese until creamy, then add powdered sugar and vanilla.
  7. Whip heavy cream separately to stiff peaks and fold into the cream cheese mixture. Chill.
  8. Heat sugar and water in a pan without stirring until it turns amber.
  9. Remove from heat and whisk in coconut cream and salt, then cool until pourable.
  10. Assemble the cake by layering sponge, cream, and repeating until all layers are stacked.
  11. Frost the top with cream and drizzle caramel generously over it.
  12. Top with fresh cherries and crushed nuts or crumbs.
  13. Refrigerate for 1 hour before slicing.
