Indulge in these rich and silky caramel cheesecake bars, featuring a buttery crust and a soft caramel topping.

Ingredients

  • For the crust:
    • 2 cups crushed biscuits
    • ½ cup melted butter
    • 2 tbsp brown sugar
  • For the filling:
    • 450g cream cheese, softened
    • ¾ cup sugar
    • 2 eggs
    • 1 tsp vanilla
    • ¼ cup yogurt or sour cream
  • For the caramel topping:
    • 1 cup soft caramel candies or caramel chips
    • 2 tbsp milk or cream
  • Optional garnish:
    • Whipped cream
    • Powdered sugar
    • Flaky salt

Instructions

  1. Preheat oven to 175°C (350°F). Mix biscuits, butter, and brown sugar. Press into a lined 9×9 pan. Bake for 10 minutes. Cool slightly.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla and yogurt. Pour over crust and smooth the top.
  3. Bake for 30–35 minutes, until set and lightly golden at the edges. Cool, then chill for at least 4 hours.
  4. Melt caramels with milk until smooth. Pour over chilled cheesecake and spread evenly. Chill for 30 more minutes.
  5. Cut into bars with a warm knife. Top with whipped cream, a dusting of sugar, or flaky sea salt.
