- For the crust:
- 2 cups crushed biscuits
- ½ cup melted butter
- 2 tbsp brown sugar
- For the filling:
- 450g cream cheese, softened
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla
- ¼ cup yogurt or sour cream
- For the caramel topping:
- 1 cup soft caramel candies or caramel chips
- 2 tbsp milk or cream
- Optional garnish:
- Whipped cream
- Powdered sugar
- Flaky salt
- Preheat oven to 175°C (350°F). Mix biscuits, butter, and brown sugar. Press into a lined 9×9 pan. Bake for 10 minutes. Cool slightly.
- Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla and yogurt. Pour over crust and smooth the top.
- Bake for 30–35 minutes, until set and lightly golden at the edges. Cool, then chill for at least 4 hours.
- Melt caramels with milk until smooth. Pour over chilled cheesecake and spread evenly. Chill for 30 more minutes.
- Cut into bars with a warm knife. Top with whipped cream, a dusting of sugar, or flaky sea salt.

- Drizzle extra caramel and sprinkle toasted nuts as a dressing idea.
