- 6 cups peeled, sliced apples (Granny Smith or Honeycrisp)
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp all-purpose flour
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup thick caramel sauce (plus extra for drizzling)
- 1 egg (for egg wash)
- Optional: coarse sugar for sprinkling
- Make the apple filling by tossing sliced apples with lemon juice, sugars, cinnamon, nutmeg, flour, salt, and vanilla.
- Line a 9-inch pie pan with the bottom crust. Pour in the apple filling and drizzle caramel sauce over the top.
- Cut the second crust into strips and create a lattice over the filling. Brush with egg wash and sprinkle with coarse sugar.
- Bake at 375°F (190°C) for 50–60 minutes, covering the edges if they brown too fast.
