  • 2 cups crushed digestive biscuits or graham crackers
  • 1/2 cup melted butter
  • 680g cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 2 apples, peeled and diced
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • Pinch of nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup cold butter, cubed
  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 325°F (160°C). Mix biscuit crumbs with butter, press into bottom of springform pan. Bake for 10 minutes, then cool.
  2. Beat cream cheese and sugar until smooth. Add vanilla, then eggs one at a time, followed by sour cream. Pour the mixture over the crust.
  3. Bake for 50–60 minutes until the center is set. Turn off the oven, crack the door, and let cool inside for 1 hour. Chill for at least 4 hours or overnight.
  4. In a pan, sauté apples with butter, brown sugar, cinnamon, and nutmeg until tender. Set aside.
  5. For the crumble, mix flour, sugar, cinnamon, and butter until crumbly. Bake on a sheet at 350°F (175°C) for 8–10 minutes.
  6. In a saucepan, melt butter and brown sugar. Add cream, simmer for 2 minutes, and stir in vanilla to make the caramel.
  7. Top the chilled cheesecake with sautéed apples, sprinkle with crumble, and finish with a generous drizzle of caramel.
