Creamy, cinnamon-kissed, caramel-drenched, and unbelievably cozy caramel apple cheesecake layers.

Ingredients

  • 1½ cups graham crumbs
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ⅓ cup melted butter
  • 2 blocks cream cheese (450g), softened
  • ½ cup sugar
  • ¼ cup sour cream
  • 1 tsp vanilla
  • 2 eggs
  • 2 apples, diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • Dash nutmeg
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 2 tbsp butter
  • Pinch sea salt

Instructions

  1. Heat oven to 325°F (160°C). Mix crust ingredients and press into springform pan. Bake 8 minutes.
  2. Beat cream cheese + sugar until smooth. Add sour cream, vanilla, then eggs gently.
  3. Pour filling over crust. Bake 40–45 minutes until center slightly jiggles. Cool, then chill 4 hours.
  4. Sauté apples with butter, sugar, cinnamon & nutmeg until tender.
  5. Simmer caramel ingredients until bubbling and slightly thickened.
  6. Top cheesecake with apples + caramel. Add powdered sugar if desired.

Notes

  • Use tart apples like Granny Smith
  • Chill overnight for perfect slices
  • Make gluten-free with almond flour crust
