- 1½ cups graham cracker crumbs
- ½ cup melted butter
- 2 tbsp brown sugar
- 450g cream cheese, softened
- ½ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 apples, peeled & thinly sliced
- 1 tbsp lemon juice
- ½ tsp cinnamon
- 1 tbsp brown sugar
- ½ cup flour
- ¼ cup brown sugar
- ¼ cup rolled oats
- ¼ cup cold butter
- ¼ tsp cinnamon
- ½ cup sugar
- 2 tbsp water
- ¼ cup cream (coconut or dairy)
- Pinch salt
- Preheat to 350°F (175°C). Mix crumbs, melted butter & sugar. Press into lined 9×9 pan. Bake 10 minutes.
- Beat cream cheese, sugar, eggs, vanilla until smooth. Pour over crust.
- Toss apples with lemon juice, cinnamon & brown sugar. Layer over cheesecake.
- Combine flour, brown sugar, oats, cold butter & cinnamon until crumbly. Sprinkle on top.
- Bake 35–40 minutes. Cool fully & chill 3 hours.
- Make caramel: melt sugar + water to amber, whisk in cream & salt. Drizzle over bars.

- Chill fully before slicing
- Use tart apples for better flavor
- Add toasted pecans for crunch
