Deliciously light and creamy Caramel Apple Cheesecake Bars, perfect for fall gatherings.

Ingredients

  • 1½ cups graham cracker crumbs
  • ½ cup melted butter
  • 2 tbsp brown sugar
  • 450g cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 apples, peeled & thinly sliced
  • 1 tbsp lemon juice
  • ½ tsp cinnamon
  • 1 tbsp brown sugar
  • ½ cup flour
  • ¼ cup brown sugar
  • ¼ cup rolled oats
  • ¼ cup cold butter
  • ¼ tsp cinnamon
  • ½ cup sugar
  • 2 tbsp water
  • ¼ cup cream (coconut or dairy)
  • Pinch salt

Instructions

  1. Preheat to 350°F (175°C). Mix crumbs, melted butter & sugar. Press into lined 9×9 pan. Bake 10 minutes.
  2. Beat cream cheese, sugar, eggs, vanilla until smooth. Pour over crust.
  3. Toss apples with lemon juice, cinnamon & brown sugar. Layer over cheesecake.
  4. Combine flour, brown sugar, oats, cold butter & cinnamon until crumbly. Sprinkle on top.
  5. Bake 35–40 minutes. Cool fully & chill 3 hours.
  6. Make caramel: melt sugar + water to amber, whisk in cream & salt. Drizzle over bars.

Notes

  • Chill fully before slicing
  • Use tart apples for better flavor
  • Add toasted pecans for crunch
