A delicious and easy-to-make caprese stuffed chicken recipe, filled with fresh tomatoes, mozzarella, and basil.

Ingredients

  • 3 chicken breasts
  • 2 tomatoes (sliced)
  • 150g mozzarella (sliced)
  • Fresh basil leaves
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt & pepper
  • 1 tsp paprika

Instructions

  1. Cut slits into chicken breasts (not all the way through).
  2. Stuff each slit with tomato, mozzarella, and basil.
  3. Season with salt, pepper, and paprika.
  4. Heat olive oil, sear chicken 3–4 minutes per side.
  5. Add garlic and a splash of water or broth.
  6. Bake at 180°C (350°F) for 20–25 minutes until cooked through.

Notes

  • Ensure the chicken is cooked through before serving.
  • Serve with a side salad for a complete meal.
  • Can be paired with pasta for an Italian dinner.
