- 1 box chocolate cake mix
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup chocolate chips
- ¼ cup white chocolate chips
- ¼ cup shredded coconut
- ¼ cup sliced almonds
- ½ cup unsalted butter, softened
- 1½ cups powdered sugar
- 1 tsp vanilla extract
- 1–2 tbsp heavy cream
- Melted chocolate for drizzle (optional)
- Extra shredded coconut (optional)
- Crushed pecans or sprinkles (optional)
- Make the Cookie Dough: Mix cake mix, eggs, oil, and vanilla until combined. Fold in chocolate chips, white chocolate chips, and nuts.
- Scoop and Bake: Scoop dough onto a lined baking sheet and press gently to flatten. Bake at 350°F (175°C) for 10–12 minutes. Let cool.
- Whip the Filling: Beat butter, powdered sugar, vanilla, and cream until fluffy.
- Assemble the Sandwich Cookies: Spread filling on the flat side of one cookie and top with another.
- Decorate and Chill: Drizzle with melted chocolate, sprinkle with coconut and nuts, then chill for 10 minutes to set.
