- 6 large eggs
- 12 medium shrimp, peeled & deveined
- 3 tbsp mayo
- 1 tsp Dijon mustard
- 1/2 tsp lemon juice
- 1/2 tsp Cajun seasoning (plus more for topping)
- 1/4 tsp smoked paprika
- 1 tbsp butter
- Hot sauce (for drizzle)
- Salt & black pepper, to taste
- Fresh chopped parsley, for garnish
- Boil eggs for 10 minutes, cool in ice water, then peel. Slice in half and remove yolks.
- Mash yolks with mayo, mustard, lemon juice, Cajun seasoning, and paprika. Season to taste.
- In a skillet, melt butter and toss shrimp with Cajun seasoning. Sauté 2–3 minutes per side until golden.
- Pipe or spoon yolk filling back into egg whites. Top each one with a seared shrimp.
- Drizzle with hot sauce, sprinkle with extra Cajun seasoning and parsley.
