A spicy southern dinner hit that brings the bayou flavor home with a delicious garlic butter sauce.

Ingredients

  • 1 lb large shrimp, peeled & deveined (tails on)
  • 2 ears of corn, chopped into chunks
  • 1 lb smoked sausage, sliced
  • 1 lb baby potatoes, halved
  • 4 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tbsp Cajun seasoning
  • 1 tsp Old Bay (optional for that extra kick)
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • Salt & pepper to taste

Instructions

  1. In a large pot of salted water, boil potatoes for 10 mins, then toss in corn for 5 more. Drain and set aside.
  2. In a large skillet, sear the sausage slices until browned.
  3. Add shrimp to the skillet and cook 2–3 mins per side until pink and juicy.
  4. Melt butter in a pan, then stir in garlic, Cajun seasoning, Old Bay, and lemon juice. Let it bubble for 2–3 mins.
  5. Combine all ingredients in a large bowl or tray, pour the garlic butter sauce over, and toss to coat. Finish with parsley and serve hot.

Notes

  • For extra spice, adjust the amount of Cajun seasoning.
  • Serve with crusty bread to soak up the garlic butter sauce.
  • Leftovers can be stored in the refrigerator for up to 2 days.
