- 1 lb large shrimp, peeled & deveined (tails on)
- 2 ears of corn, chopped into chunks
- 1 lb smoked sausage, sliced
- 1 lb baby potatoes, halved
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tbsp Cajun seasoning
- 1 tsp Old Bay (optional for that extra kick)
- 1 tbsp lemon juice
- 1 tbsp chopped parsley
- Salt & pepper to taste
- In a large pot of salted water, boil potatoes for 10 mins, then toss in corn for 5 more. Drain and set aside.
- In a large skillet, sear the sausage slices until browned.
- Add shrimp to the skillet and cook 2–3 mins per side until pink and juicy.
- Melt butter in a pan, then stir in garlic, Cajun seasoning, Old Bay, and lemon juice. Let it bubble for 2–3 mins.
- Combine all ingredients in a large bowl or tray, pour the garlic butter sauce over, and toss to coat. Finish with parsley and serve hot.
Notes
- For extra spice, adjust the amount of Cajun seasoning.
- Serve with crusty bread to soak up the garlic butter sauce.
- Leftovers can be stored in the refrigerator for up to 2 days.
