A spicy and cheesy loaded baked potato with Cajun shrimp, perfect for a comforting meal.

Ingredients

  • 1 large russet potato
  • 1/2 lb shrimp, peeled & deveined
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp sour cream
  • 1/4 cup diced tomatoes
  • 2 tbsp diced red onion
  • 2 tbsp chopped green onions
  • 1/2 tsp Cajun seasoning
  • 1/4 tsp smoked paprika
  • Salt & pepper, to taste
  • Spicy cheese sauce (optional)

Instructions

  1. Scrub the potato, pierce with a fork, and bake at 400°F for 45–60 mins until crispy outside and fluffy inside.
  2. Toss shrimp with Cajun seasoning, paprika, salt, and pepper. Sauté in butter for 2–3 minutes per side.
  3. Slice open the baked potato and fluff the inside with a fork. Mix in sour cream and shredded cheddar.
  4. Add shrimp, diced tomato, red onion, and a drizzle of spicy cheese sauce.
  5. Sprinkle chopped green onions and an extra pinch of Cajun seasoning on top.

Notes

  • Adjust Cajun seasoning to taste for more or less heat.
  • For extra crispiness, rub the potato with oil before baking.
  • Use pre-cooked shrimp to save time.
