  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1/2 cup celery, finely chopped
  • 1/2 cup bell pepper (yellow or orange), diced
  • 2 tbsp all-purpose flour
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • 3 cups seafood or chicken stock
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 lb mixed seafood (shrimp, scallops, crab, or fish), chopped if large
  • Salt & black pepper to taste
  • Fresh dill or chives for garnish

Instructions

  1. In a pot, melt butter over medium heat. Add onion, garlic, celery, and bell pepper. Cook until soft and aromatic.
  2. Sprinkle in flour, stirring constantly for 2 minutes until lightly golden.
  3. Add Cajun seasoning, smoked paprika, and cayenne. Stir for 30 seconds.
  4. Slowly whisk in the stock, then bring to a gentle simmer. Cook for 10 minutes until slightly thickened.
  5. Stir in cream, milk, and seafood. Simmer for 6–8 minutes until seafood is cooked through and tender. Garnish with chives or dill.

Notes

  • Adjust the cayenne pepper to control the heat level.
