- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1/2 cup celery, finely chopped
- 1/2 cup bell pepper (yellow or orange), diced

- 1 tsp Cajun seasoning
- 1/2 tsp smoked paprika

- 3 cups seafood or chicken stock
- 1 cup heavy cream
- 1/2 cup milk
- 1/2 lb mixed seafood (shrimp, scallops, crab, or fish), chopped if large
- Salt & black pepper to taste

- In a pot, melt butter over medium heat. Add onion, garlic, celery, and bell pepper. Cook until soft and aromatic.
- Sprinkle in flour, stirring constantly for 2 minutes until lightly golden.
- Add Cajun seasoning, smoked paprika, and cayenne. Stir for 30 seconds.
- Slowly whisk in the stock, then bring to a gentle simmer. Cook for 10 minutes until slightly thickened.
- Stir in cream, milk, and seafood. Simmer for 6–8 minutes until seafood is cooked through and tender. Garnish with chives or dill.
