A spicy and cheesy twist on the classic Sloppy Joe, made with ground chicken and Cajun seasoning for a quick and flavorful weeknight dinner.

Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • ½ yellow onion, finely diced
  • ½ red bell pepper, diced
  • 2 cloves garlic, minced
  • ½ cup tomato sauce
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Cajun seasoning (store-bought or homemade)
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • 4 brioche buns (toasted)
  • 4 slices cheddar cheese (melty and bold)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until soft.
  2. Add ground chicken, breaking it up as it cooks until browned and fully cooked.
  3. Stir in garlic, tomato sauce, ketchup, Worcestershire sauce, Cajun seasoning, and smoked paprika. Simmer for 5–7 minutes.
  4. Turn off heat, place cheddar cheese slices on top, and cover until melted.
  5. Spoon the mixture onto toasted brioche buns and serve immediately.

Notes

  • Adjust Cajun seasoning to taste for more or less heat.
  • Use any cheese you prefer for melting.
  • Serve with pickles or coleslaw for extra crunch.
