1 small wheel of Brie cheese (cut into bite-sized cubes)
½ cup crushed pistachios
½ cup breadcrumbs
2 tablespoons brown sugar
1 large egg, beaten
2 tablespoons butter or olive oil (for frying)
For the Butterscotch Sauce:
¼ cup butter
¼ cup brown sugar
2 tablespoons cream or milk
½ teaspoon vanilla extract
Toppings:
¼ cup chopped pistachios
2 tablespoons cherry or cranberry preserves
Instructions
In a bowl, mix crushed pistachios, breadcrumbs, and brown sugar. Dip each brie cube into the beaten egg, then roll in the coating until evenly covered. Chill for 10 minutes to firm up.
Heat butter or oil in a skillet over medium heat. Fry the brie bites on all sides until golden brown and crisp, about 1–2 minutes per side. Alternatively, bake at 400°F (200°C) for 8–10 minutes until bubbly and golden.
In a small saucepan, melt butter and brown sugar over low heat, stirring until smooth. Add cream and vanilla, whisking until glossy and slightly thickened.
Place warm brie bites on a serving platter. Drizzle generously with butterscotch sauce. Top each with a spoonful of cherry preserves and a sprinkle of crushed pistachios.
Notes
Use panko breadcrumbs for extra crunch.
Add a pinch of sea salt over the top for the perfect sweet-salty finish.
Best served warm while the cheese is beautifully gooey inside.
