450 g cream cheese, softened
1 cup crushed pineapple, well-drained
1 cup shredded cheddar cheese
½ cup chopped green onions
½ teaspoon garlic powder
1 cup chopped pecans
¼ cup finely chopped butterscotch chips
¼ cup crushed buttery crackers
Extra green onions & pecans for garnish
Instructions
In a large bowl, beat softened cream cheese until smooth and creamy. Fold in crushed pineapple, cheddar, green onions, and garlic powder until evenly combined.
Cover and refrigerate for 30–45 minutes, until firm enough to shape. Transfer to plastic wrap and form into a smooth ball or oval shape.
In a shallow dish, mix chopped pecans, butterscotch chips, and crushed crackers. Roll the cheese ball gently in the mixture until completely coated.
Top with extra pecans and a few chopped green onions. Serve chilled with buttery crackers, pretzels, or fresh veggie sticks.
Notes
For a sweeter twist, add 1 tablespoon of honey to the mix.
