Ingredients
Scale
1 cup all-purpose flour
½ cup unsalted butter (softened)
¼ cup light brown sugar
1 (11 oz) bag butterscotch chips
½ cup light corn syrup
¼ cup unsalted butter
2 cups mixed nuts (peanuts, cashews, and pecans)
Flaky sea salt for garnish (optional)
Instructions
Preheat oven to 350°F and line a square baking dish with parchment. Mix flour, softened butter, and brown sugar until crumbly. Press evenly into the dish.
Bake for 15–18 minutes until lightly golden.
In a saucepan over low heat, melt butterscotch chips, corn syrup, and butter, stirring constantly until smooth and glossy.
Stir in the mixed nuts, making sure they’re fully coated. Pour over the warm crust and smooth it out evenly.
Let bars cool completely, then slice into squares and sprinkle flaky sea salt on top.
Notes
Refrigerate the bars to speed up cooling time.
Feel free to mix and match nuts based on your preference.
For a richer flavor, use dark brown sugar instead of light brown sugar.
