Deliciously fluffy and sweet butterscotch muffins, perfect for breakfast or a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 2 eggs
  • 3/4 cup buttermilk
  • 1/3 cup melted butter
  • 1 tsp vanilla
  • 1 cup butterscotch chips
  • For drizzle: 1/2 cup butterscotch chips + 2 tbsp milk

Instructions

  1. Preheat oven to 375°F. Line muffin tin. Mix flour, baking powder, soda, salt, and sugar.
  2. In another bowl, beat eggs, buttermilk, melted butter, and vanilla.
  3. Combine wet and dry ingredients just until blended. Fold in butterscotch chips.
  4. Divide batter into muffin cups. Bake for 18–22 minutes until golden. Cool on a rack.
  5. Melt drizzle ingredients and spoon over muffins.

Notes

  • For added texture, consider adding chopped pecans or a dusting of cinnamon sugar.
  • For an allergy-friendly version, use oat milk and dairy-free butterscotch chips.
