1 lb chicken breast or thigh, cubed
½ cup buttermilk or yogurt
½ cup cornstarch
½ cup flour
Salt & pepper
Oil for frying
¼ cup brown sugar
2 tbsp honey
2 tbsp soy sauce
1 tbsp ketchup
1 tsp Dijon mustard
1 tbsp butter
¼ tsp garlic powder
¼ tsp ground ginger
1 tbsp cornstarch + 2 tbsp water (slurry)
Instructions
Marinate & coat: Soak chicken cubes in buttermilk or yogurt for 30 minutes. Mix cornstarch and flour with salt and pepper. Coat chicken until fully covered.
Fry: Heat oil over medium-high. Fry chicken in batches until golden, crispy, and cooked through. Drain on paper towels.
Make the glaze: In a small saucepan, simmer brown sugar, honey, soy sauce, ketchup, Dijon, butter, garlic powder, and ginger until bubbling. Add cornstarch slurry and cook until thick and glossy.
Toss & serve: Add chicken to a bowl and pour glaze over the top. Toss to coat completely. Garnish with herbs or sesame seeds.
