  • ½ cup (115g) unsalted butter, melted
  • 1 cup (200g) brown sugar (light or dark)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup butterscotch chips (optional: add white or dark chocolate chips)
  • ¼ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a slight overhang for easy removal.
  2. In a large bowl, whisk together melted butter and brown sugar until smooth and glossy. Add the egg and vanilla extract, mixing until combined.
  3. Whisk flour, baking powder, and salt together in a separate bowl. Gradually add to the wet ingredients and stir until no streaks of flour remain. Fold in butterscotch chips and nuts if using.
  4. Pour batter evenly into the prepared pan. Bake for 20–25 minutes, or until golden brown and the center is just set (do not overbake for a chewy texture). Cool completely in the pan before slicing into bars.
  5. Cut into squares and serve as-is — or drizzle with extra melted butterscotch for a glossy finish.
