A creamy, crunchy, and buttery no-bake dessert layered with spiced apples, sweet butterscotch, and a whipped cheesecake filling—perfect for fall.

Ingredients

  • 1 1/2 cups crushed graham crackers or Biscoff cookies
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream or whipped topping
  • 2 apples, peeled and diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon butter
  • 1/2 cup butterscotch pudding or sauce
  • Caramel sauce, for drizzle
  • Extra cookie crumbles, for topping

Instructions

  1. In a bowl, combine crushed cookies and melted butter. Press into bottom of small dessert cups.
  2. In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream. Layer on top of crust.
  3. In a skillet, cook apples with brown sugar, cinnamon, and butter until tender. Let cool slightly. Add over cheesecake layer.
  4. Spoon butterscotch sauce over the apples.
  5. Top with a swirl of whipped cream, a drizzle of caramel, and cookie crumbles. Chill before serving.
