A creamy delight with a luscious layer of brown sugar boba cheesecake, combining the flavors of bubble tea with a rich, soft texture.

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup brown sugar
  • 6 tablespoons melted butter
  • 500g (16 oz) cream cheese, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup cooked tapioca pearls (boba)
  • 1/2 cup cooked boba pearls
  • 1/2 cup brown sugar
  • 1/4 cup water
  • Extra caramel sauce (optional)

Instructions

  1. Preheat oven to 170°C / 325°F. Line a 7–8 inch springform pan with parchment.
  2. Mix crushed graham crackers, brown sugar, and melted butter. Press firmly into the bottom of the pan. Bake 8–10 minutes and cool.
  3. Beat cream cheese and brown sugar until smooth and creamy.
  4. Add eggs one at a time, mixing gently. Stir in vanilla and heavy cream.
  5. Fold in cooked boba pearls evenly.
  6. Pour filling over cooled crust. Bake 45–55 minutes until center is slightly jiggly.
  7. Turn off oven and let cheesecake cool inside with door slightly open for 1 hour. Chill at least 4 hours or overnight.
  8. For topping: Simmer brown sugar and water until syrupy. Toss cooked boba in syrup. Spoon over chilled cheesecake and drizzle extra caramel if desired.
