Broccoli cheese stuffed chicken is a delicious delight, featuring juicy chicken breasts filled with a savory mixture of broccoli and cheese.

  • 3 large boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning
  • 2 tablespoons olive oil
  • 1 cup finely chopped broccoli (lightly steamed)
  • 1/2 cup diced red bell pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1 clove garlic, minced
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat oven to 190°C / 375°F. Line a baking dish with parchment or lightly grease it.
  2. Slice each chicken breast horizontally to create a deep pocket (do not cut all the way through).
  3. Season chicken inside and out with salt, pepper, paprika, garlic powder, and Italian seasoning.
  4. In a bowl, mix broccoli, red bell pepper, mozzarella, cream cheese, garlic, and parsley.
  5. Stuff the mixture evenly into each chicken breast. Secure with toothpicks if needed.
  6. Heat olive oil in a skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden.
  7. Transfer to baking dish and bake 18–22 minutes until fully cooked (internal temp 75°C / 165°F).
  8. Let rest 5 minutes before slicing to keep all that melted cheese inside.

  • Don’t overstuff to prevent cheese leaking.
  • Lightly steam broccoli first for tender texture.
  • Use sharp cheddar for bolder flavor.
