Ingredients

  • 2 large flour tortillas
  • 4 large eggs
  • ½ cup shredded cheddar cheese
  • 1 tbsp butter or olive oil
  • ¼ cup diced red bell pepper
  • ¼ cup chopped spinach
  • 2 tbsp chopped green onions
  • Salt and pepper, to taste
  • Optional: salsa, sour cream, or hot sauce for dipping

Instructions

  1. In a skillet, melt butter over medium heat. Add whisked eggs and cook until softly scrambled.
  2. Toss in bell pepper, spinach, and season with salt and pepper. Cook for 1-2 more minutes until veggies are just softened.
  3. On one half of a tortilla, pile on the scrambled egg mix and top with shredded cheese.
  4. Fold the tortilla over and place it back in the pan. Cook on each side until golden brown and crispy.
  5. Cut into wedges, garnish with green onions, and serve hot with your favorite dipping sauce.
