- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup fresh or frozen blueberries
- 2 tbsp sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch
- Make the Blueberry Swirl: Simmer blueberries, sugar, lemon, and cornstarch until thickened. Cool completely.
- Prepare the Dough: Cream butter and sugar, then add egg and vanilla.
- Add Dry Ingredients: Mix in flour, baking powder, and salt to form a soft dough.
- Roll & Spread: Roll dough into a rectangle, spread blueberry filling over top, and roll into a log.
- Slice & Bake: Chill, slice into cookies, and bake at 350°F (175°C) for 10–12 minutes.
