Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup fresh or frozen blueberries
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch

Instructions

  1. Make the Blueberry Swirl: Simmer blueberries, sugar, lemon, and cornstarch until thickened. Cool completely.
  2. Prepare the Dough: Cream butter and sugar, then add egg and vanilla.
  3. Add Dry Ingredients: Mix in flour, baking powder, and salt to form a soft dough.
  4. Roll & Spread: Roll dough into a rectangle, spread blueberry filling over top, and roll into a log.
  5. Slice & Bake: Chill, slice into cookies, and bake at 350°F (175°C) for 10–12 minutes.
