  • 1 large egg
  • 1 1/4 cups whole milk
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Maple syrup (for serving)
  • Extra blueberries (for serving)
  • Powdered sugar (optional, for serving)

Instructions

  1. In a large bowl, whisk flour, sugar, baking powder, and salt.
  2. In another bowl, whisk egg, milk, melted butter, and vanilla until smooth.
  3. Pour wet ingredients into dry and gently mix until just combined (small lumps are okay — don’t overmix!).
  4. Fold in blueberries carefully.
  5. Heat a lightly buttered skillet over medium heat. Pour 1/4 cup batter per pancake.
  6. Cook 2–3 minutes until bubbles form, flip, and cook another 2 minutes until golden brown.
  7. Stack pancakes high, top with fresh blueberries and drizzle generously with maple syrup.
