Irresistible Blueberry Buttermilk Pancake Casserole – the ultimate sweet brunch bake everyone will ask you for!

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 tbsp granulated sugar
  • 2 large eggs
  • 2 cups buttermilk
  • 1/4 cup melted butter (plus extra for greasing)
  • 1 1/2 cups fresh blueberries (plus extra for topping)
  • 1 tsp vanilla extract
  • Maple syrup or powdered sugar (for serving)

Instructions

  1. Mix the dry ingredients in a large bowl.
  2. Whisk the wet ingredients in another bowl.
  3. Combine wet and dry ingredients, then fold in blueberries.
  4. Pour the batter into a greased 9×13″ baking dish and sprinkle extra blueberries on top.
  5. Bake at 350°F (175°C) for 35–40 minutes, or until golden and set.
  6. Let cool for 5 minutes, then serve with maple syrup or powdered sugar.
