Light, creamy, fruity and totally divine blueberry lemon cream dessert bars.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup lemon curd or homemade lemon pudding
  • 1 1/2 cups whipped cream or whipped topping
  • 1 cup crushed vanilla wafers or tea biscuits
  • Topping:
  • 1 cup fresh blueberries
  • 2 tablespoons chopped pistachios
  • Extra whipped cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment.
  2. Cream butter and sugar until light. Add eggs and vanilla, then fold in flour, baking powder, and salt.
  3. Spread batter into the pan and bake 18–20 minutes or until golden. Let cool completely.
  4. Spread a layer of lemon curd or pudding over the cooled base. Sprinkle crushed cookies evenly.
  5. Gently spread whipped cream over top. Chill for at least 1 hour to set.
  6. Just before serving, top with blueberries and chopped pistachios. Add extra whipped cream if desired.
