- 6 small flour tortillas
- 2 tbsp melted butter
- ½ cup graham cracker crumbs
- 1 tbsp sugar
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup heavy cream, whipped
- 1 cup blueberry pie filling (or fresh blueberries with syrup)
- Brush tortillas with melted butter, coat with graham cracker crumbs and sugar. Drape over oven racks and bake at 375°F for 6–8 minutes until crisp.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
- Let taco shells cool completely, then pipe or spoon the cheesecake mixture inside.
- Spoon blueberry filling over the cream layer.
- Sprinkle with extra graham crumbs or powdered sugar. Serve chilled.
