Fluffy, fruity, sweet and impossibly satisfying Blueberry Banana Pancakes.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cups buttermilk
  • 1 large ripe banana, mashed
  • 1 large egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • Extra blueberries and banana slices, for topping
  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine mashed banana, buttermilk, egg, melted butter, and vanilla. Mix well.
  3. Pour wet mixture into dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the blueberries.
  5. Heat a nonstick pan or griddle over medium heat and lightly grease. Pour 1/4 cup batter for each pancake.
  6. Cook 2–3 minutes until bubbles form, then flip and cook another 1–2 minutes until golden and cooked through.
  7. Stack, top with banana slices, extra blueberries, and a drizzle of maple syrup.

Notes

  • Use frozen blueberries straight from the freezer to prevent bleeding.
  • Mash banana thoroughly for smooth batter texture.
  • Let batter rest 5–10 minutes before cooking for extra fluff.
