  • 1½ cups crushed chocolate sandwich cookies (like Oreo)
  • ¼ cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup dark sweet cherries, pitted and halved (fresh or frozen)
  • ½ cup mini chocolate chips (optional)
  • ¾ cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • Fresh cherries or berries for topping
  • Chocolate shavings or curls for decoration

Instructions

  1. Preheat oven to 160°C (325°F). Mix crushed cookies with melted butter. Press into the bottom of a springform pan. Bake for 8–10 minutes. Let cool.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream. Fold in halved cherries and mini chocolate chips.
  3. Pour filling into cooled crust. Bake in a water bath for 55–65 minutes until the center is slightly jiggly. Turn off oven and let cool inside with the door cracked open for 1 hour. Chill in fridge for at least 4 hours or overnight.
  4. Heat cream until simmering, then pour over chocolate chips. Let sit 2 minutes, then stir until smooth. Let cool slightly before pouring over cheesecake.
  5. Top with fresh cherries or berries and chocolate curls. Slice and serve cold for the perfect texture.
