1½ cups crushed chocolate sandwich cookies (like Oreo)
¼ cup melted butter
3 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
½ cup sour cream
1 cup dark sweet cherries, pitted and halved (fresh or frozen)
½ cup mini chocolate chips (optional)
¾ cup heavy cream
1 cup semi-sweet chocolate chips
Fresh cherries or berries for topping
Chocolate shavings or curls for decoration
Instructions
Preheat oven to 160°C (325°F). Mix crushed cookies with melted butter. Press into the bottom of a springform pan. Bake for 8–10 minutes. Let cool.
Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream. Fold in halved cherries and mini chocolate chips.
Pour filling into cooled crust. Bake in a water bath for 55–65 minutes until the center is slightly jiggly. Turn off oven and let cool inside with the door cracked open for 1 hour. Chill in fridge for at least 4 hours or overnight.
Heat cream until simmering, then pour over chocolate chips. Let sit 2 minutes, then stir until smooth. Let cool slightly before pouring over cheesecake.
Top with fresh cherries or berries and chocolate curls. Slice and serve cold for the perfect texture.
Notes
For a richer flavor, use high-quality chocolate chips.
Chill the cheesecake overnight for best results.
Variations can include adding liqueur to the filling for an adult version.
