- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup vegetable oil
- 1 cup milk
- 3 large eggs
- 1 cup Biscoff spread
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 cup Biscoff spread (softened, for filling & frosting)
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- Biscoff cookies for decoration
- Whisk sugars, oil, eggs, milk, vanilla, and melted Biscoff until smooth.
- Fold in flour, baking powder, and salt.
- Divide batter into two 9-inch pans and bake at 350°F (175°C) for 28–32 minutes.
- Beat cold heavy cream and powdered sugar until fluffy, then fold in a little Biscoff.
- Layer cake with frosting and Biscoff spread. Decorate with piped swirls and cookie pieces.
