Cheesy, saucy, hearty and unbelievably comforting Beef & Spinach Cannelloni!

12 cannelloni tubes
1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
500g ground beef
200g fresh spinach
250g ricotta cheese
1 cup shredded mozzarella
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
1 tsp dried oregano
2 cups tomato passata or marinara sauce
1/2 cup béchamel sauce (optional but recommended)
Fresh basil and chopped parsley, for garnish
Instructions
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Heat olive oil in a skillet. Sauté onion and garlic until soft. Add ground beef and cook until browned. Season with salt, pepper, and oregano. Add chopped spinach and cook until wilted. Let mixture cool.
Stir ricotta and half of the mozzarella into the cooled meat and spinach filling.
Fill cannelloni tubes using a piping bag or spoon.
Spread half of the tomato sauce on the bottom of the baking dish. Arrange filled cannelloni over it. Top with remaining tomato sauce and béchamel. Sprinkle with remaining mozzarella and Parmesan.
Cover with foil and bake for 30 minutes. Uncover and bake an additional 10-15 minutes until golden and bubbly.
Garnish with fresh herbs and serve hot.
Notes
Don’t overfill the pasta tubes to avoid breakage.
Use pre-cooked cannelloni or soak dry tubes in hot water for 10 mins.
Let the dish rest 10 mins before serving for best texture.
