A hearty and comforting beef pot pie casserole with a biscuit topping, perfect for a family dinner.

Ingredients

  • lbs beef stew meat, cubed
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1½ cups diced potatoes
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 3 tablespoons flour
  • 3 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt & pepper to taste
  • 1 can refrigerated biscuit dough (or homemade biscuits)
  • 2 tablespoons melted butter (for brushing)

Instructions

  1. Heat olive oil in a deep skillet or Dutch oven. Sear beef until browned.
  2. Add onion, carrots, celery, and potatoes. Cook until slightly tender.
  3. Sprinkle in flour and stir until it coats everything. Slowly add beef broth, garlic powder, thyme, salt, and pepper. Simmer until thickened.
  4. Stir in frozen peas and corn. Transfer the filling to a 9×13 casserole dish.
  5. Arrange biscuit dough evenly on top. Brush with melted butter. Bake at 375°F for 20–25 minutes or until golden brown and bubbly.

Notes

  • You can use homemade biscuits instead of canned biscuit dough.
  • Adjust the seasoning to your taste.
