A flavorful and easy slow cooker beef coconut curry that is perfect for weeknight dinners.

  • 2 lbs beef chuck or stewing beef, cut into chunks
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tbsp tomato paste
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp cinnamon
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)
  • Cooked basmati rice, for serving

Instructions

  1. Brown the Beef (Optional but Flavor-Boosting!): In a skillet over medium heat, sear the beef in olive oil just until browned.
  2. Mix the Sauce Base: In a bowl, whisk together coconut milk, curry paste, tomato paste, garlic, ginger, onion, and all the spices.
  3. Assemble in the Slow Cooker: Add the beef and sauce mixture into the slow cooker. Stir well to coat. Cook on Low for 7–8 hours or High for 4–5 hours.
  4. Finish & Thicken (Optional): If the curry is too thin, remove the lid for the last 30 minutes or stir in a slurry of cornstarch and water.
  5. Serve it Up: Spoon over fluffy basmati rice, garnish with fresh cilantro, and serve with naan or lime wedges.

Notes

  • For a richer flavor, browning the beef is recommended.
  • Adjust the thickness of the curry by using a cornstarch slurry if desired.
  • Serve with naan for a complete meal.
