- 2 lbs beef chuck or stewing beef, cut into chunks
- 1 can (13.5 oz) full-fat coconut milk
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp red curry paste
- 1 tbsp tomato paste
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp cinnamon
- Salt and black pepper to taste
- 1 tbsp olive oil
- Fresh cilantro, chopped (for garnish)
- Cooked basmati rice, for serving
- Brown the Beef (Optional but Flavor-Boosting!): In a skillet over medium heat, sear the beef in olive oil just until browned.
- Mix the Sauce Base: In a bowl, whisk together coconut milk, curry paste, tomato paste, garlic, ginger, onion, and all the spices.
- Assemble in the Slow Cooker: Add the beef and sauce mixture into the slow cooker. Stir well to coat. Cook on Low for 7–8 hours or High for 4–5 hours.
- Finish & Thicken (Optional): If the curry is too thin, remove the lid for the last 30 minutes or stir in a slurry of cornstarch and water.
- Serve it Up: Spoon over fluffy basmati rice, garnish with fresh cilantro, and serve with naan or lime wedges.
Notes
- For a richer flavor, browning the beef is recommended.
- Adjust the thickness of the curry by using a cornstarch slurry if desired.
