For the Chicken:
4 boneless chicken thighs
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
Salt and pepper to taste
1/3 cup BBQ sauce (sugar-free or natural preferred)
Chopped chives or parsley for garnish
For the Potato Wedges:
4 medium potatoes, cut into wedges
2 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
Salt and black pepper to taste
Chopped parsley for garnish
For the Cucumber Chili Salad:
1 cucumber, thinly sliced
1 red chili, thinly sliced
1 tbsp apple cider vinegar
Salt to taste
For the Slaw:
1 cup shredded cabbage
1/4 cup shredded carrots
1/4 cup Greek yogurt or natural plain yogurt
1 tbsp lemon juice
1 tbsp chopped dill or parsley
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Toss potato wedges with oil and seasonings. Spread on a baking sheet and roast for 30–35 minutes, flipping halfway until golden and crispy.
Season chicken with spices and olive oil. Grill or pan-sear for 5–6 minutes per side until cooked through. In the last 2 minutes, brush with BBQ sauce and caramelize lightly.
In a bowl, toss cucumbers and chili with vinegar and salt. Set aside.
Mix all slaw ingredients in a bowl until creamy and well combined. Chill until serving.
Plate grilled chicken with potato wedges, slaw, and cucumber salad. Garnish with fresh herbs.
