- 1 loaf brioche or challah bread, cut into cubes
- 3 ripe bananas, sliced
- 5 large eggs
- 1 ½ cups whole milk
- ½ cup heavy cream
- ½ cup brown sugar
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- ½ cup chopped pecans (optional)
- Powdered sugar for topping
- Extra banana slices and maple syrup for serving
- Grease a baking dish and spread bread cubes evenly. Layer sliced bananas throughout.
- Whisk eggs, milk, cream, brown sugar, maple syrup, vanilla, cinnamon, nutmeg, and salt until smooth.
- Pour custard mixture over bread and bananas. Press lightly to absorb.
- Cover and refrigerate overnight.
- Bake at 350°F (175°C) for 40–45 minutes until golden. Top with powdered sugar, bananas, and syrup.
