A delicious overnight banana French toast casserole perfect for brunch. Easy to prepare ahead and bake in the morning.

  • 1 loaf brioche or challah bread, cut into cubes
  • 3 ripe bananas, sliced
  • 5 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ½ cup chopped pecans (optional)
  • Powdered sugar for topping
  • Extra banana slices and maple syrup for serving

Instructions

  1. Grease a baking dish and spread bread cubes evenly. Layer sliced bananas throughout.
  2. Whisk eggs, milk, cream, brown sugar, maple syrup, vanilla, cinnamon, nutmeg, and salt until smooth.
  3. Pour custard mixture over bread and bananas. Press lightly to absorb.
  4. Cover and refrigerate overnight.
  5. Bake at 350°F (175°C) for 40–45 minutes until golden. Top with powdered sugar, bananas, and syrup.

Notes

  • Best made with stale bread for better absorption.
  • Add nuts for extra crunch.
