A lusciously creamy dessert featuring layers of banana, caramel, and whipped cream, perfect for any occasion.

  • 2 cups crushed digestive biscuits or graham crackers
  • 1/2 cup melted butter
  • 3 ripe bananas, mashed
  • 1/3 cup cornstarch
  • 2 cups milk
  • 1/2 cup sugar
  • 3 egg yolks
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 cup whipped cream or stabilized whipped topping
  • 1 banana, sliced
  • Crushed cookies or biscuit crumbs for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed biscuits with melted butter and press into the base of a springform pan. Bake for 10 minutes. Cool completely.
  2. In a saucepan, whisk milk, sugar, cornstarch, salt, and egg yolks over medium heat until thickened. Remove from heat and stir in vanilla, butter, and mashed bananas. Let it cool slightly.
  3. Pour the banana filling over the cooled crust and refrigerate for at least 4 hours or overnight.
  4. For caramel, melt butter and brown sugar in a saucepan. Stir in cream and simmer for 2–3 minutes. Remove from heat, add vanilla. Cool slightly.
  5. Spread caramel over the banana layer and chill again until set.
  6. Top with piped whipped cream, banana slices, and cookie crumbs. Serve chilled.
