A delightful recipe for oven-baked meatballs served with roasted potatoes and tomatoes, perfect for a family dinner.

Ingredients

Scale
  • 500g ground beef
  • 1 small onion, grated
  • 3 garlic cloves, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 tablespoons chopped parsley
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 5 medium potatoes, peeled and cut into wedges
  • 2 cups cherry tomatoes
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 3 garlic cloves, minced
  • 1/2 cup water
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, combine ground beef, grated onion, garlic, egg, breadcrumbs, parsley, paprika, cumin, salt, and black pepper. Mix gently until combined and shape into medium meatballs.
  2. Preheat the oven to 200°C (400°F). Place potato wedges, cherry tomatoes, and sliced onions into a large baking dish. Drizzle with olive oil and season with paprika, oregano, salt, and black pepper. Toss well.
  3. Arrange the meatballs between the vegetables in the baking dish.
  4. Mix tomato sauce, tomato paste, garlic, paprika, olive oil, and water in a bowl until smooth. Pour the sauce evenly over the meatballs and vegetables.
  5. Bake for 40-45 minutes until the meatballs are juicy and browned and the potatoes are golden and tender. For extra caramelization, broil for the last 3 minutes.
  6. Sprinkle generously with fresh parsley before serving. Serve hot with yogurt cucumber dressing, fresh bread, or a crisp green salad for the ultimate comforting dinner.

Notes

  • Roast the potatoes separately for 10 minutes before adding the meatballs for extra crispiness.
  • Add colorful peppers or zucchini for more roasted flavor and texture.
  • A garlic lemon yogurt dressing pairs beautifully with the rich baked juices.
  • Use lean beef or ground chicken for a lighter option.
  • Swap breadcrumbs with oats for added fiber.
  • This recipe is naturally easy to make gluten-free with gluten-free breadcrumbs.
