  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 1 tbsp garlic paste
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 4 large potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup warm milk
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • 2 cups baby carrots
  • 2 cups green peas
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp thyme (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, lemon juice, oregano, parsley, turmeric, paprika, salt, and pepper. Coat chicken drumsticks well with the marinade and place them on a lined baking tray.
  3. Bake for 35–40 minutes, flipping halfway through, until golden brown and juices run clear.
  4. While the chicken bakes, boil potatoes until fork-tender. Drain and mash with butter, warm milk, salt, and pepper until smooth.
  5. For the veggies, toss baby carrots with olive oil, salt, pepper, and thyme. Roast in oven or sauté in pan until tender. Steam or microwave green peas with a pinch of salt until bright and cooked.
  6. Plate the chicken with a scoop of mashed potatoes, roasted carrots, and peas. Drizzle with pan juices and sprinkle with fresh herbs.

  • Marinate chicken for at least 1 hour (or overnight) for maximum flavor.
  • Use red potatoes or Yukon gold for ultra-creamy mash.
  • Swap peas with steamed broccoli for variation.
  • For a dairy-free version, use olive oil instead of butter and oat milk in mash.
