1 block feta cheese (7–8 oz)
¼ cup extra virgin olive oil
¼ cup sun-dried tomatoes (in oil), chopped
¼ cup pitted olives (Kalamata + green mix)
1 tsp dried oregano
½ tsp crushed red pepper flakes
1 clove garlic, minced
1 tbsp chopped fresh parsley (plus more for garnish)
Freshly cracked black pepper to taste
Toasted baguette slices or crackers, for serving
Instructions
Preheat oven to 375°F. Place the block of feta in a small baking dish.
In a small bowl, mix olive oil, sun-dried tomatoes, olives, garlic, oregano, red pepper flakes, parsley, and black pepper.
Pour the olive oil mixture over the feta. Bake uncovered for 20–25 minutes until the cheese is soft and golden on top.
Top with extra chopped parsley and a drizzle of the hot olive oil from the dish.
Serve hot with crusty bread, pita, or crackers.

Use a high-quality block of feta for the best texture and flavor.
Can be garnished with fresh herbs like thyme or basil for variation.
