2 cups cherry tomatoes (halved)
1 lemon (thinly sliced)
3 tbsp olive oil
3 cloves garlic (minced)
1 tsp dried oregano
1/2 tsp smoked paprika
Salt and pepper (to taste)
Fresh parsley (chopped (for garnish))
Instructions
1️⃣ Preheat the Oven:
Preheat your oven to 375°F (190°C).
2️⃣ Prepare the Baking Dish:
Arrange the halved cherry tomatoes and lemon slices evenly in a large baking dish.
Drizzle with 2 tbsp olive oil and sprinkle with half of the minced garlic, oregano, salt, and pepper. Toss to coat.
3️⃣ Season the Cod:
Pat the cod fillets dry with paper towels.
Rub them with the remaining 1 tbsp olive oil and season with smoked paprika, salt, and pepper.
