4 medium apples (Honeycrisp or Fuji work best)
100g feta cheese, crumbled
2 tablespoons honey (plus more for drizzling)
¼ cup dried cranberries (or fresh)
2 tablespoons chopped walnuts or pecans (optional)
½ teaspoon cinnamon
1 tablespoon olive oil or melted butter
A few thyme leaves or mint (for garnish)
Instructions
Preheat oven to 375°F (190°C). Halve the apples and scoop out the cores with a spoon to create a small cavity. Brush the cut sides with olive oil or melted butter and sprinkle lightly with cinnamon.
Place apples cut-side up on a baking dish lined with parchment paper. Fill each cavity with crumbled feta and cranberries. Drizzle with honey and sprinkle with a few chopped nuts if using. Bake for 20–25 minutes, until the apples are tender and slightly caramelized, and the feta is golden at the edges.
Remove from oven, drizzle with a touch more honey, and garnish with fresh thyme or mint. Serve warm as an elegant appetizer, brunch treat, or light dessert.
