Ingredients

  • 4 medium apples (Honeycrisp or Fuji work best)
  • 100g feta cheese, crumbled
  • 2 tablespoons honey (plus more for drizzling)
  • ¼ cup dried cranberries (or fresh)
  • 2 tablespoons chopped walnuts or pecans (optional)
  • ½ teaspoon cinnamon
  • 1 tablespoon olive oil or melted butter
  • A few thyme leaves or mint (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Halve the apples and scoop out the cores with a spoon to create a small cavity. Brush the cut sides with olive oil or melted butter and sprinkle lightly with cinnamon.
  2. Place apples cut-side up on a baking dish lined with parchment paper. Fill each cavity with crumbled feta and cranberries. Drizzle with honey and sprinkle with a few chopped nuts if using. Bake for 20–25 minutes, until the apples are tender and slightly caramelized, and the feta is golden at the edges.
  3. Remove from oven, drizzle with a touch more honey, and garnish with fresh thyme or mint. Serve warm as an elegant appetizer, brunch treat, or light dessert.
