This bacon wrapped three cheese stuffed meatloaf is an irresistible comfort food dish, combining savory ground beef with a rich and cheesy filling, all wrapped in crispy bacon.

  • 2 lbs ground beef (80/20)
  • 1 cup Italian breadcrumbs
  • 2 eggs
  • ½ cup grated Parmesan
  • 1 small onion, finely diced
  • 4 garlic cloves, minced
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1 cup shredded mozzarella
  • 1 cup shredded sharp cheddar
  • ½ cup Monterey Jack cheese
  • 4 oz cream cheese, softened
  • 2 tbsp chopped parsley
  • 1214 bacon slices
  • ⅓ cup BBQ sauce
  • 2 tbsp ketchup
  • 2 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking tray with foil and place a wire rack on top.
  2. In a large bowl, combine the ground beef, breadcrumbs, eggs, Parmesan, onion, garlic, Worcestershire sauce, ketchup, Dijon mustard, smoked paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until just combined.
  3. In another bowl, mix together the mozzarella, cheddar, Monterey Jack, cream cheese, and parsley.
  4. Spread the meat mixture into a large rectangle on parchment paper.
  5. Spoon the cheese mixture down the center, leaving a border around the edges.
  6. Carefully roll the meat around the filling, pinching the seams tightly to seal.
  7. Wrap the entire loaf with overlapping bacon slices.
  8. Place the loaf seam-side down on the prepared rack.
  9. Bake for 45 minutes.
  10. Meanwhile, whisk together the BBQ sauce, ketchup, honey, Worcestershire sauce, garlic, and Dijon mustard.
  11. Brush the glaze generously over the bacon and bake for another 20–25 minutes, until the internal temperature reaches 160°F (71°C).
  12. Broil for 2–3 minutes until the bacon is crispy and caramelized.
  13. Let the meatloaf rest for 10 minutes before slicing to keep the cheesy center intact.
  14. Garnish with chopped parsley and serve with mashed potatoes, roasted vegetables, or garlic bread.
