  • 1 ripe avocado (mashed)
  • 1 poached egg
  • 23 slices smoked trout (or smoked salmon)
  • Fresh dill (for garnish)
  • Salt and freshly ground black pepper (to taste)
  • 1 teaspoon lemon juice
  • Optional: Drizzle of olive oil

Instructions

Prepare the Toast:

  1. Toast the bread until golden and crisp.

Make the Avocado Spread:

  1. Mash the ripe avocado in a bowl with a sprinkle of salt, pepper, and lemon juice.
  2. Spread the mashed avocado evenly over the toasted bread.

Poach the Egg:

  1. Bring a pot of water to a gentle simmer. Add a splash of vinegar (optional).
  2. Crack the egg into a small bowl, then gently slide it into the simmering water.
  3. Poach for 3-4 minutes until the egg white is set but the yolk is still runny. Use a slotted spoon to remove the egg.
