  • 2 cups cooked shredded chicken
  • 1 large ripe avocado, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, finely diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • ¼ cup mayonnaise or Greek yogurt
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Romaine lettuce leaves for serving

Instructions

  1. Dice the avocado, halve the cherry tomatoes, and finely chop the red onion and herbs.
  2. In a bowl, mix mayonnaise (or Greek yogurt), lemon juice, salt, pepper, dill, and parsley.
  3. Add shredded chicken, avocado, tomatoes, and red onion. Gently fold everything together.
  4. Chill the salad for 15–20 minutes to let flavors blend.
  5. Serve on romaine lettuce leaves and top with extra dill and cracked pepper.
